Blueberry lovers, these rustic muffins are for you! I make these for my girls as an easy get up and go breakfast. Want to turn baking into some family fun? Go blueberry picking with the kids, then come home and bake some delightful fresh muffins. Enjoy!
- 2 cups flour (sub gluten free flour for wheat allergies/gluten intolerance)
- 1 and 1/2 tsp. cinnamon
- 3/4 cup sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. vanilla
- 1/2 cup applesauce
- 1/2 cup soy milk
- 1 stick (8 tbsp. of dairy free butter)
- 1 1/2 cup fresh blueberries (you can add more or less depending on your preference)
-Preheat the oven to 350.
-In a large bowl mix together wet ingredients; applesauce, milk, vanilla and butter. Set aside.
-In a medium bowl mix together all dry ingredients.
-Gradually add in the dry ingredients to the wet ingredients a little at a time until fully combined.
-Fold in the blueberries.
-I used a square muffin pan as too create the rustic look but feel free to use a regular muffin pan with or without liners as well.
-Bake for about 25-28 min.
-Let cool and pair with a homemade latte and a good book or your favorite tv show for a little “me time” :)!
